Editor's intro: fall soup rules are simple. It should cost little, fill the house with smell, and make tomorrow's lunch better than tonight's dinner. These fifteen are the rotation we actually cook — each with its key ingredients up front so you can shop from the card, and a freezer guide below because soup is the original meal prep.
45 min
Classic Chicken Noodle Soup
The original, done properly: poach the chicken in the stock so the broth tastes like chicken twice, then shred it back in. Carrot, celery, onion, egg noodles, a squeeze of lemon at the end. Written out in full on its own recipe page.
Canned tomatoes, onion, garlic, stock, a pinch of sugar and a swirl of cream — blended silky and built for a grilled cheese to dip. The sugar is not optional; it is what balances tinned-tomato acidity. Full recipe on its own page.
Roast the squash first — soup made from raw squash tastes like a draft of itself. Key players: butternut, onion, garlic, sage fried in butter until crisp, vegetable stock, a grating of nutmeg. Blend smooth; freeze the extra sage butter for toast.
1 hr 15 min
Beef & Barley Soup
The Sunday soup that makes Monday's lunch the best meal of the week. Beef shin or stewing beef, pearl barley, carrot, celery, thyme, a splash of the liquid from a jar of pickles at the end if you are brave — it sharpens everything. Keeps 4 days and freezes like a dream.
45 min
Creamy Potato Leek Soup
Leeks washed properly (they hide grit like it is a hobby), floury potatoes, stock, cream. Blend half and leave half chunky for the best texture. A knob of butter and white pepper at the end; serve with too much good bread.
40 min
Italian Wedding Soup
Tiny pork-and-parmesan meatballs poached straight in the broth, orzo, and spinach wilted in at the last minute. Roll the meatballs with wet hands and do not make them bigger than a marble — the soup eats with a spoon, not a knife. Lemon zest in the meatball mix is the move nobody expects.
50 min
Lentil & Smoked Paprika Soup
Fully plant-based and nobody has ever missed the meat: red lentils, onion, carrot, smoked paprika, cumin, canned tomatoes. The lentils collapse and thicken it themselves. Finish with olive oil and a squeeze of lemon; keeps 5 days, so it is the meal-prep soup of this list.
40 min
Chicken Tortilla Soup
A tomato-and-chipotle broth with shredded chicken, black beans and sweetcorn, topped with crisp tortilla strips, avocado and lime. Fry the strips while the soup simmers — 90 seconds, and they make the dish. Use rotisserie chicken and it lands in 30.
35 min
Broccoli Cheddar Soup
The trick is cooking the broccoli in the soup just until bright, then blending only a third of it — fully blended broccoli soup goes khaki and sad. Sharp cheddar, a little mustard, and nutmeg. Frozen broccoli works perfectly and costs a third of fresh here.
1 hr 10 min
French Onion Soup
Four onions, cooked low and slow for 45 of those minutes — there is no shortcut that tastes like this. Beef stock, a splash of white wine if the bottle is open, thyme, and the mandatory Gruyère-topped crouton lid. Make a double batch of the onions and freeze half; next time it is a 25-minute soup.
55 min
Minestrone, the Clean-Out-the-Fridge Edition
Onion, carrot, celery, zucchini, canned tomatoes, white beans, small pasta, and whatever green is wilting in the drawer. Stir pesto through at the end instead of serving it on top. Cook the pasta separately and add it per bowl if you plan leftovers — otherwise it drinks the broth overnight.
40 min
Creamy Mushroom Soup
Two kinds of mushroom if you can — chestnut for body, a handful of dried porcini soaked and chopped for depth. Thyme, garlic, a little cream, and blend it only halfway so it still eats like soup. The porcini soaking liquid goes in too, strained through a paper towel.
1 hr 20 min
Split Pea & Ham Soup
The slowest soup here and the cheapest per bowl by a wide margin. Yellow split peas, a ham hock or leftover gammon, onion, carrot, bay. It thickens as it sits — by day two it slices. Thin leftovers with stock, never water, when reheating.
45 min
Roasted Carrot & Ginger Soup
Roasting the carrots with the ginger concentrates the sweetness before they ever meet the pot. Coconut milk instead of cream keeps it plant-based and silky; lime and coriander at the end. Two kilos of carrots costs almost nothing in fall, which is exactly when this soup earns its place.
45 min
Sausage, Kale & White Bean Soup
Brown Italian sausage hard, then build the broth in the same pot with garlic, chilli flakes, white beans and their liquid. Kale goes in torn, stems removed, for the last 5 minutes. It is a full dinner in a bowl — beans, greens, protein — and it reheats better than almost anything else here.
Soup freezer guide
Cool the soup completely, then freeze flat in labelled zip bags (they stack like books and thaw in minutes under warm water). Most soups keep 3 months. Leave headspace — soup expands — and always freeze pasta, noodles and cream out, adding them fresh when you reheat.
Questions
Which of these soups freeze best?
Almost all of them. The exceptions to handle with care: potato leek (freeze before adding cream, or accept a slightly grainer texture) and anything with pasta — freeze minestrone and chicken noodle bases without the pasta or noodles and cook those fresh when reheating.
How long do the soups keep in the fridge?
Most keep 4 days in a sealed container; the lentil and split pea soups keep 5. Cool soups quickly — within 2 hours — in shallow containers before refrigerating.
Which soups are vegetarian or vegan?
Butternut sage, lentil & paprika, roasted carrot & ginger and minestrone are vegan as written. Potato leek, broccoli cheddar, creamy tomato and mushroom are vegetarian, and each full recipe page lists a dairy-free swap.
